Crispy and bubbly oven roasted smashed red potatoes. Pair with my delicious creamy lemon herb sauce for an extra tang.
Steps

Preheat oven to 400°F.

Toss baby red potatoes with olive oil, garlic powder, Italian seasoning, onion powder, and minced garlic.

Spread potatoes on a cookie sheet. Roast until tender, about 25–30 minutes.

Remove from oven. Increase oven to 450°F.

Smash each potato gently with a fork. Sprinkle with grated Parmesan cheese.

Return to oven and bake until crispy, about 10–15 minutes.

Remove and let cool slightly before serving.

Tastes great paired with my creamy lemon herb sauce.
Tips
Use the smallest red potatoes for extra crispiness and flavor. (quarter size or smaller, about 12–15 potatoes)
