Street Corn Nibblers

Hard to believe I was 75 years old when I first tried Mexican street corn. My family (nephew Mike in particular) was always encouraging me, telling me how delicious it is; but the combination of ingredients just sounded yucky to me. Then I tried a bite my sister had ordered at a restaurant one night. LOVED IT!
Naturally, we had to create our own recipe so we can make it at home frequently. After online research, combining recipes and tweaking ingredients (we don't like cilantro), we came up with this yummy, crunchy, tangy treat. Great as a snack, appetizer, or side dish.

With a large, sharp knife, cut each ear of corn in half (so it's two small cobs). Then cut each into fourths going long way through the cob. It can help to first wrap the whole corn cob in a damp paper towel and microwave for a minute to steam the center cob to soften. (we doubled this recipe.)

Preheat oven to 375°F. Place the corn pieces in a single layer on a parchment lined baking sheet and bake for 7-8 minutes. If you like more char on the corn, broil for the last minute.

In a large bowl, mix together the mayonnaise, sour cream, lime juice, and Tajín. Add the cooked corn and, with a rubber spatula, mix/toss well until every piece is evenly coated. Arrange on a serving plate and sprinkle with the cheeses. Serve immediately.
Tips
Of course, if you like cilantro, sprinkle on top just before serving.
