Today is World Idli Day and I made a fusion one with lots of spices - this is Chetti Idli. Idli without rice is unthinkable though Semolina or Sooji is used and other various grains like millets, oats, veggies like Jackfruit etc

Today is World Idli Day and I made a fusion one with lots of spices - this is Chetti Idli. Idli without rice is unthinkable though Semolina or Sooji is used and other various grains like millets, oats, veggies like Jackfruit etc
Steps

Idli - wash idli rice well and soak for 8 hrs, wash Urad Dal well and soak for 8 hrs, wash Chura well and soak and add fenugreek seeds to Chura

Adding little water add idli rice, Urad Dal, chura and fenugreek seeds to blender and blend smooth, pour to a bowl and ferment 24 hrs, add salt and mix well

Grease idli moulds, pour the batter and steam in a steamer for 12 mins, set aside to cool, demould and set aside for next step

Chetti Idli - cut the idli into pieces, chop the onion, chop tomato and green chilies

In a wok heat oil, add chopped onion and cook till soft, add chopped tomato and green chilies, ginger and garlic paste, turmeric powder, red chilli powder, salt and mix well, on low flame oil should surface

Add idli and mix well

Set aside and sprinkle lime juice

Plate on banana leaf and enjoy on this World Idli Day
Tips
Soak the idli ingredients well, fermenting is essential
