Steps

Season pork chops with salt and pepper, dust with flour.

Dip pork in beaten egg, then coat with panko.

Fry pork in oil over medium heat, 5-6 min per side, until golden. Drain.

Mix stock, sugar, soy sauce, and mirin in a bowl.

Sauté onion in oil until translucent and caramelized.

Pour stock mixture over onions.

Slice pork, place on onions, drizzle with beaten eggs.

Cook on medium-low until egg is just set.

Serve over rice, garnish with scallions.
