Ingredients

2 servings
  1. 2 pieces(pounded to 1cm thick) Boneless pork chops
  2. to tasteSalt
  3. to tastePepper
  4. as needed(for dusting) Flour
  5. 1(for breading) Egg
  6. 1 cupPanko
  7. as needed(for frying) Oil
  8. 1/2 cupDashi stock or chicken stock
  9. 2 teaspoonsSugar
  10. 1 tablespoonSoy sauce
  11. 2 teaspoonsMirin
  12. 2(for topping) Eggs
  13. 1medium (thinly sliced) Onion
  14. 2 servingsSteamed white rice
  15. 1(chopped) Scallion

Steps

40 minutes
  1. 1

    Season pork chops with salt and pepper, dust with flour.

  2. 2

    Dip pork in beaten egg, then coat with panko.

  3. 3

    Fry pork in oil over medium heat, 5-6 min per side, until golden. Drain.

  4. 4

    Mix stock, sugar, soy sauce, and mirin in a bowl.

  5. 5

    Sauté onion in oil until translucent and caramelized.

  6. 6

    Pour stock mixture over onions.

  7. 7

    Slice pork, place on onions, drizzle with beaten eggs.

  8. 8

    Cook on medium-low until egg is just set.

  9. 9

    Serve over rice, garnish with scallions.
