Ingredients

Maximum 20-30 minutes
About 1 teaspoon per strawberry
  • 8strawberries
  • 4 teaspoons of powdered sugar. The sugar is required for the mixture (see steps 5 and 6 for details)
  • 1 teaspoonlemon juice. If you want the jam not to be too sweet, you can increase the amount

Steps

Maximum 20-30 minutes
  1. 1

    Wash the strawberries, cut off their leaves and put them in the food chopper. Chop them as long as possible until they become a pulp. If you don't have a food chopper, squeeze them with a fork or a potato masher (the tool we use to make mashed potato).

    Strain the pulp with a colander (not too small, or it will take too long) into a bowl or saucepan.

    In the end, you will have about 1 teaspoon of juice for each strawberry. If you have excess juice, you can use it too, as long as you adjust the quantities of the other ingredients accordingly. If you do not use the juice immediately, pour it into a glass that can be closed tightly with a lid, or a jar that has its own lid. Keep in the refrigerator for maximum 1-2 days.

    If you have an electric stove, turn on the small burner to about medium heat, for preheating.

    Take a coffee pot or a small saucepan, depending on the quantity you want to make.
    Pour in the strawberry juice and sift the sugar with a sieve or a small fine mesh strainer. The sugar should be at least half the amount of strawberry juice. If you want the jam to be sweeter, can add a little more sugar.

    Add the lemon juice. If you don't want the jam to be too sweet or if you accidentally added too much sugar, add more lemon juice. For example, you can add a total of 2 teaspoons of lemon juice for 4 teaspoons of sugar.

    Light the burner on low heat. If you have an electric stove, lower the burner you turned on before.

    Boil until the mixture begins to foam, stirring constantly with a spoon to prevent it from burning.
    CAUTION: If the heat is too high, the room is warm, or you are making a small amount, the mixture will foam more quickly, so set the heat as low as possible. If the room is cold, or if you are making more amount, it will take longer, so increase the heat slightly, until the mixture foams.

    Once the mixture starts to foam, set the heat as low as possible and keep stirring.
    When the mixture starts to become slightly creamy, pour a few drops into a bowl or a small dish.

    If the mixture has the texture you want, then it is ready, otherwise keep mixing for 1-2 minutes and test again.

    If you boil the mixture too long, it may become a jelly, but if you like it that way, you can enjoy it without any problem. If it becomes too thick, you can continue boiling it carefully and make strawberry candies with it (the recipe will be published soon).
    To make sure the mixture won't burn or if you can't lower the heat enough, you can raise the pot in the air, above the heat, while stirring (the required time might be increased).

    When the mixture is ready, stir it to stop foaming without becoming hard, and carefully pour as much as you want into a jar with a lid. Leave it open for a few minutes until it cools down and then close it tightly with the lid.

    Now our jam is ready and we can enjoy it whenever we want.
    The candies are kept out of the fridge, in a cool place. Homemade jam is an ideal accompaniment to our breakfast or the easy crepes, which you can find in my profile.

    If our jam is not thick enough, you can pour it into the pot with very little water (just enough to cover the bottom), on very low heat (raise the pot in the air if necessary). Repeat the process from step 8.

Tips

To make sure you always make it perfect (especially if you don't have a gas stove), when trying for the first time, make a small amount of jam, making sure the amounts of ingredients are correct. If we don't achieve the right texture or flavor, next time we try adding more or less lemon juice, with a higher or lower heat (raise the pot in the air if necessary). Keep testing until you learn to make it perfect, depending on your own kitchen.
