Steps

Dry roast flattened rice and peanuts together until crisp. Set aside.

Heat mustard oil in a pan. Add cumin seeds, green chillies, ginger and garlic paste.

Add turmeric, coriander and red chilli powders. Stir well.

Add chopped onions. Saute until translucent.

Add tomatoes. Cook until soft and mushy.

Add boiled potatoes. Mash well into the mixture.

Mix wheat flour with a little water to make a slurry. Add it to the pan.

Adjust water for desired thickness. Add salt. Cook until thickened.

Garnish with chopped coriander leaves.

To serve, place hot potato curry in a bowl. Top with roasted chura, peanuts, lemon juice, chopped onion, coriander leaves and Wai Wai noodles. Enjoy!
Tips
For an extra crunch, you can add more roasted peanuts on top before serving.
