Ingredients

15 minutes
8-10 servings
  • 200 gmroasted Flattened Rice or Chura
  • 1/2 cuproasted Peanuts
  • 500 gmboiled and cubed Potatoes
  • 1-2 tbspMustard oil
  • 1 tspCumin Seeds
  • 1-2finely chopped Green Chillies
  • 1large chopped Onion
  • 2finely chopped Tomatoes
  • 1/2 tspTurmeric powder
  • 1 tspSalt
  • 1 tspKashmiri Red Chilli powder
  • 1 tspCoriander powder
  • 1 tbspWheat flour or Aata (made into a slurry with water)
  • 3-4 tbspchopped Coriander Leaves
  • Serving -
  • 2-3 tbspAloo curry (as prepared)
  • 1 tspLemon juice
  • 2 tbspchopped Onions
  • 1 tbspchopped Coriander Leaves
  • 3-4 tbsproasted Flattened Rice or Chura
  • 2 tbsproasted Peanuts
  • 2-3 tbspWai Wai Noodles

Steps

15 minutes
  1. 1

    Dry roast flattened rice and peanuts together until crisp. Set aside.

    Heat mustard oil in a pan. Add cumin seeds, green chillies, ginger and garlic paste.

    Add turmeric, coriander and red chilli powders. Stir well.

    Add chopped onions. Saute until translucent.

    Add tomatoes. Cook until soft and mushy.

    Add boiled potatoes. Mash well into the mixture.

    Mix wheat flour with a little water to make a slurry. Add it to the pan.

    Adjust water for desired thickness. Add salt. Cook until thickened.

    Garnish with chopped coriander leaves.

    To serve, place hot potato curry in a bowl. Top with roasted chura, peanuts, lemon juice, chopped onion, coriander leaves and Wai Wai noodles. Enjoy!

Tips

For an extra crunch, you can add more roasted peanuts on top before serving.
