Japanese Mango 🥭 Sando (A Cold Sandwich)

What a sensation!! Seasonal fruit -- mango 🥭 with chilled curds -- a deadly combination!
A 3 ingredients cold sandwich that is causing a furor in Japan. It is a sweet , spicy & refreshing sandwich specially dressed for the summer season.
I am absolutely obsessed by mangoes 🥭🥭 & wait eagerly for summer when mangoes are available in India . This is a quick & chilled appetizer that can do wonders to satisfy small hunger pangs.So my suggestion is try this Mango Sando at least once in this summer ⛱️🌞 & you will crave to make it again & again .
As I avoid going near gas in summers, I try making recipes that requires very little cooking or no cooking at all , yet it is satiating plus healthy too . This is one of the favourite Sunday evening snack at our home . A 5 minutes flat recipe.

Steps

Remove the crust of the bread & keep aside.

Mix icing sugar to hung curds & chill thoroughly.

How to assemble : Take 1 bread slice on a chopping board. Generously apply hung curds on one side.

Place a thick ripe mango 🥭 slice on it. Cover the mango slice with generous amount of sweetened hung curds.

Cover with another slice of bread. Wrap this sandwich in cling wrap / muslin cloth & chill it thoroughly in the refrigerator.

When you want to serve, remove the cling wrap / muslin cloth, cut the Mango Sando into 2 & serve immediately.
Tips
1) I prefer to use ripe Alphanso 🥭 but remember not to use over ripe mango or the sandwich will not taste good .
2) Try using icing sugar & not powdered sugar, as powdered sugar tends to release water when mixed with curds .
3) Chill the Mango Sando thoroughly & serve immediately.
4) I have garnished Mango Sando with a few Chilli flakes to give a tickling of sweet & spicy taste in the mouth . You can avoid it .
