Chef Cooking Tip #1: White Pepper

Use White Pepper salt mix when cooking in place of using just plain salt. The reason is that white pepper brings the flavor of food from the front of your tongue to the back, giving the food a more full body taste bringing all the Earth tones forward. White Pepper also does not get bitter when cooked like black pepper and blends perfectly into all recipes including white soups and sauces. It is a main staple to any restaurant Chef's spice rack!

Ingredients

  1. 2 TeaspoonsWhite Pepper (10%)
  2. 2 CupsKosher Salt (90%)

Cooking Instructions

    Mix all: a 90%/10% ratio of Kosher Salt to White Pepper in a container.

    Put it in a container with a lid and save until a recipe calls for salt

  4. 4

    Then add to any recipe "to taste"

  5. 5

    Note: Never add the exact amount of salt to any recipe. You can always add more but you can't add less.

My apologies for being away, I had a Traumatic Brain Injury that I was recovering from and now I'm back. I started up a new production company "Chef Hat Productions" , have founded a nonprofit for kids "Healthier Choices For A Hungry Child" 501c3 (HealthierChoicesinc.org) and Creator of "Family Flavors with Kid Kulinaire" (KidKulinaire.com), Alumni of the Culinary Institute of America (youngest to graduate at 19 years old), Highest Chef Award at Disney at 21 years old. I was named"2003 Top 1% in the nation at turning around companies".What's new for 2018We have a DVD program that will go into production in February, the first will be "Kid Fun Fit". Austin St. John (the Original Red Ranger) and Fernando Smith (Former NFL Vikings Player) and both joining me as Owner's of the project. There will be lesson plans and activities, books and a new revised website.We will then follow up with "Kid Kulinaire" cooking DVDs to follow.I enjoy all aspects of working with food and teaching families to make healthier choices in Food and Fitness while having Fun together as a Family.
