I get the egg ick very easily but the flavor blend in this recipe cuts the egg flavor almost completely. This has revolutionized lunch for me lol this might truly be my proudest creation.

Veggies are optional or can be swapped out for others, but I think the roasted red peppers and spinach really make it.

Serve by itself, or on top of some garlic naan with some olive tapenade hummus (or just some toast if you’re not extra like me😂)

Ingredients

  • 2eggs
  • 1/4 cupfeta
  • 1/4 tsporegano
  • 1/4 tspgarlic powder
  • 1/4 tspblack pepper
  • 1/4 tsponion powder
  • 4-5jarred roasted red peppers (chopped)
  • 1/4 cupchopped spinach
  • 2 tspplain Greek yogurt
  • 1 piecenaan (optional)
  • Hummus spread (optional)

Steps

  1. 1

    Whisk eggs and add all ingredients.

  2. 2

    Cook on medium low heat until eggs are cooked through.

  3. 3

    (Optional) Serve on a piece of toast or toasted naan spread with hummus. Top with extra black pepper or sriracha.
