Steps

Heat 5 tbsp oil in a pan over medium heat and add onion and sauté until it turns golden brown.

Add the ginger and garlic to it.

Stir in the tomatoes and cook until they soften and blend into the mixture. Now add salt and desired condiments.

Blanch the spinach (Blanching method: Put the washed spinach leaves into hot water for 30s seconds and then immediately put it in cold water to retain the nutrient and colour of the spinach. Then cut the blanched spinach)

Add the blanched spinach to the pan and mix well with the cooked ingredients.

Heat 2 tbsp. oil and roast the cottage cheese cubes with preferred condiments.

Add the roasted cottage cheese cubes to the spinach mixture, stirring gently to combine.

Garnish with chopped chili peppers
Tips
Pair this meal with sources of vitamin C (lemon, chili, tomato, etc.) to help the body absorb iron from plant-based foods more effectively.
