Sweet BBQ Pulled Pork

Steps

Season the pork
Rub the pork with all the dry rub ingredients.
You can do this right before bed or earlier in the day.

Brown the pork
Set cooker to Sear/Sauté – High.
Add oil and brown pork 4–5 minutes per side.

Add to cooker
Put pork in the cooker and pour the cooking liquid around it (not directly on top).

Slow cook overnight
Set:
Slow Cook – Low
Cook 8–10 hoursExample:
Start 10–11 PM
Ready 7–8 AMThe pork should fall apart easily.

Morning: Finish the BBQ
Remove pork and shred with forks.
Add the pork back with this sweet BBQ finishing sauce:
Sweet BBQ Finish Sauce
250 ml ketchup
80 g brown sugar
2 tbsp honey
1 tsp smoked paprika
1 tsp garlic powderTurn on Sear/Sauté Low for 10–15 minutes until the sauce thickens and coats the pork.

BBQ Restaurant Trick (The Magic Step)
When the pork is cooked:
Remove pork and shred with forks.
Put shredded pork back in the cooker.
Add:
2 tbsp butter
1–2 tbsp brown sugar
remaining BBQ sauceTurn on Sear/Sauté Low for 10–15 minutes.
The butter + sugar creates a thick, glossy BBQ glaze that coats the meat.
