Ingredients

6-8 servings
  • Pork
  • 2.2 kgpork shoulder
  • Rub
  • 1 tspsalt
  • 1 tspsmoked paprika
  • 1 tspgarlic powder
  • 1 tsponion powder
  • 1 tbspbrown sugar
  • Overnight Cooking Liquid
  • 200 mlapple juice
  • 120 mlketchup
  • 2 tbspbrown sugar
  • 1 tbspWorcestershire sauce
  • Sweet BBQ Sauce
  • 250 mlketchup
  • 80 gbrown sugar
  • 2 tbsphoney
  • 1 tspsmoked paprika
  • 1 tspgarlic powder
  • 2 tbspbutter
  • 2 tbspbrown sugar

Steps

  1. 1

    Season the pork

    Rub the pork with all the dry rub ingredients.

    You can do this right before bed or earlier in the day.

  2. 2

    Brown the pork

    Set cooker to Sear/Sauté – High.

    Add oil and brown pork 4–5 minutes per side.

  3. 3

    Add to cooker

    Put pork in the cooker and pour the cooking liquid around it (not directly on top).

  4. 4

    Slow cook overnight

    Set:

    Slow Cook – Low
    Cook 8–10 hours

    Example:

    Start 10–11 PM
    Ready 7–8 AM

    The pork should fall apart easily.

  5. 5

    Morning: Finish the BBQ

    Remove pork and shred with forks.

    Add the pork back with this sweet BBQ finishing sauce:

    Sweet BBQ Finish Sauce
    250 ml ketchup
    80 g brown sugar
    2 tbsp honey
    1 tsp smoked paprika
    1 tsp garlic powder

    Turn on Sear/Sauté Low for 10–15 minutes until the sauce thickens and coats the pork.

  6. 6

    BBQ Restaurant Trick (The Magic Step)

    When the pork is cooked:

    Remove pork and shred with forks.
    Put shredded pork back in the cooker.
    Add:
    2 tbsp butter
    1–2 tbsp brown sugar
    remaining BBQ sauce

    Turn on Sear/Sauté Low for 10–15 minutes.

    The butter + sugar creates a thick, glossy BBQ glaze that coats the meat.
