  1. 500 gSmall potatoes
  2. 200 mlOil (for frying)
  3. 1 tbspRed chili powder
  4. 0.5 tbspTurmeric powder
  5. 0.5 tbspCoriander-cumin powder
  6. to tasteSalt
  7. 1 tbspOil
  8. 0.5 tbspMustard seeds
  9. 0.5 tbspCumin seeds
  10. 1 pinchAsafoetida
  11. 1 sprigCurry leaves
  12. 1 tbsp(chopped) Fresh coriander
  13. 100 mlWater

    Wash and peel small potatoes. Make slits in the center of each.Fry potatoes in hot oil on medium heat until 50% cooked. Drain.

    In a bowl, mix fried potatoes with chili, turmeric, coriander-cumin powder, and salt. Let marinate for 5 minutes.

    Heat 1 tbsp oil in a pressure cooker. Add mustard seeds, cumin seeds, and asafoetida for tempering.Add curry leaves and marinated potatoes. Pour in 100ml water.

    Close the lid and cook for 2 whistles.Garnish with fresh coriander and serve hot.

Tips

For extra flavor, you can add a pinch of garam masala before serving.
