"Amakara-ni" is a typical Japanese way to flavor dishes where you basically simmer food with sugar and soy sauce.

Cut the chicken into bite size pieces. Heat the pot with 2 tsp of olive oil. Stir fry the chicken on medium heat. Season with a pinch of salt.

Cut the pumpkin and daikon into bite size pieces. Microwave them for 2 min on 600W or until they become lightly soft. Then add them into the pot to cook together.

When the chicken has nearly cooked, add all the * ingredients and put the lid on to simmer for about 15 min on low to medium heat.

Occasionally rock the pot to help mix everything and make sure the sauce hasn't evaporated so it doesn't burn. When the sauce is almost gone and all the food has cooked, sprinkle in the sugar and shake the pot a little to mix again.
