Ingredients

8 servings
  • 1medium onion
  • 2 clovesgarlic, minced
  • 2 Tablespoonsolive oil
  • 1 (15 oz.)can black-eyed peas
  • 5 cupswater
  • 2 Tablespoonschicken bouillon granules
  • 2whole bay leaves
  • 1/2 teaspoondried thyme
  • 1/4 teaspoonred pepper flakes (optional)
  • 1/2 teaspoonfresh ground black pepper

Steps

  1. 1

    In a saucepan, sauté onion in oil till tender.

  2. 2

    Remove from heat and add garlic. Stir.

  3. 3

    Add and stir together remaining ingredients. Return to heat and bring to a boil.

  4. 4

    Serve by itself or over rice.
