First, prepare the ragù. We like to make it the day before. Next, make the béchamel sauce: In a saucepan, melt 3 1/2 tablespoons (50 grams) of butter. Separately, measure out 1/3 cup (50 grams) of flour. Once the butter is fully melted, add the flour and mix well. Cook for 3-4 minutes, then add 2 cups (500 ml) of milk and grated nutmeg to taste. Cook until the sauce reaches your desired consistency—we prefer a béchamel that's not too thick.

Place the ragù in a bowl and add the béchamel sauce. Mix well until fully combined.

Now assemble the lasagna. Start by spreading a thin layer of ragù on the bottom of your baking dish. Add a layer of lasagna noodles to cover the bottom. Add a layer of sliced cooked ham and a little more ragù. Add another layer of noodles, then a layer of sliced mozzarella and more ragù. Continue layering, alternating ham and mozzarella, until you use up all the ham and mozzarella (with these ingredients, we make 2 layers of ham and 2 layers of mozzarella).

When all the ingredients are used, finish with a final layer of noodles topped generously with ragù and plenty of grated Parmesan. Bake in a preheated oven at 400°F (200°C) for about 35-40 minutes. Cover with aluminum foil for the first 20 minutes, then uncover and bake for another 15-20 minutes. For the last 5 minutes, turn on the broiler to create a golden crust on top.

Remove the lasagna from the oven and let it rest for 5-6 minutes before slicing. Your lasagna is ready to enjoy!
