Ingredients

  1. 1 1/2 poundskinless fish fillets such as cod fillets
  2. 1/4 cupfresh grated romano cheeae
  3. 4 tablespoonsbutter, melted
  4. juice of 1 lemon
  5. 1 teaspoondijon nustard
  6. 1shallot, chopped
  7. 1jalapeno pepper, roasted and chopped
  8. 2garlic cloves, minced
  9. to tastesalt and pepper
  10. 1 teaspoonsriracha seasoning salt
  11. 1teapoon hot sauce, such as franks brabd
  12. 1/2 teaspoondryed thyme
  13. 14 cupheavy cream
  14. 1/4 cupchicken broth
  15. To Garnish
  16. fresh chopped parsley and sliced green onions

Cooking Instructions

  1. 1

    Preheat the oven to 375. Butter a baking dish that can hold the fish in one layer

    Season fish with salt and pepper and place in prepared pab, sprinkle romano cheese evenly over top of fish

  3. 3

    Combine all remaining ingredients in a bowl except parsley and green onions

  4. 4

    Pour evenly over fish and bake uncovered about 10 minutes depending g on thickness of fish until fish is cooked through

    Serve spooning sauce over fish and garnish with green onions and pasley

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
