Vietnamese Summer Rolls
Steps

Cook the noodles and leave in fridge to cool.

Cut the cucumber into small sticks, grate the carrot and set aside.

Dip one 1 sheet of rice paper in water for 5 seconds and lay flat on the counter.

Add 1 leaf of lettuce, a small handful of noodles, a pinch of carrot, 2 sticks of cucumber and 2 shrimp or meat of choice.

Fold over once, then fold both sides and then roll up like a burrito.

Repeat with the rest of the rolls and serve with Nước chấm dipping sauce or sauce of choice.
Tips
Add crispy onion for extra crunch.
