Braised Tofu with Prawns & Edamame

Many Japanese words have been imported to English but often pronounced differently. ‘Edamame’ (the young soy beans) is one of them. It’s ‘e-dʌ-ma-me’ and NOT ‘e-dʌ-ma-miː’. When a word ends with ‘e’, English speaking people pronounce wrong. ‘Shiitake’ and ‘Sake’ are other examples. Please remember ‘e’ in Japanese words is always pronounced like ‘e’ in ‘bed’.

By the way, this is another yummy and easy Tofu dish. It’s very popular and there are many recipes, but mine is the easiest one. And of course it is delicious!

Ingredients

4 servings
  1. 400-500 gTofu *medium to soft type recommended
  2. 200 gPrawns *peeled and deveined
  3. 1 pinchSalt
  4. 1/2 tablespoonSake
  5. 4Spring Onions *white part
  6. 1small piece Ginger *finely chopped or grated
  7. 1 tablespoonOil *canola oil or sesame oil
  8. 1/2 cupEdamame Beans removed from pods
  9. Salt & White Pepper
  10. <Sauce Ingredients>
  11. 1 cupDashi Stock OR Chicken Stock (or Water 1 cup & Asian Chicken Bouillon Powder 1 teaspoon)
  12. 2 tablespoonsSake
  13. 1 tablespoonPotato Starch

Steps

  1. 1

    Prepare prawns. If large ones, cut them in half. Finely chop up white part of Spring Onions. Cut Tofu into bite-size cubes.

  2. 2

    Place all the sauce ingredients in a mixing bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

  3. 3

    Heat Oil in a large frying pan or a wok, cook Prawns, Spring Onions and Ginger.

  4. 4

    Before you add the sauce mixture into the pan, mix it well again. Then pour in the sauce mixture and bring it to boil and let it thicken.

  5. 5

    Add Tofu and Edamame gently mix and combine. Salt & White Pepper if required.
