Healthier Banana bread - no butter - no sugar - no eggs

What I love about banana bread is that it uses ready-to-rot bananas, and you can make it as healthy / unhealthy as you like. And if plated well, and served with a scoop of ice cream, it becomes a fancy dessert too.

Steps

60 mins
  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

  3. 3

    Mix everything but the flour.

  4. 4

Add the flour last, mix. You should get a wet sticky mix.

  5. 5

Pour mixture into a buttered 4x8 inch loaf pan.

  6. 6

Bake for 45 mins. Cool on a rack. Remove from pan and slice to serve.

  7. 7

Note: I skipped adding sugar and replaced that with dates and honey. If you don't like the flavour of dates or honey, you can use 1/3 cup of sugar.

Everything is better on a full stomach. I cook when I am happy, tired, depressed, anxious, and it always makes my day better. And we always have people over, and it gives me plenty chances to keep trying out new recipes.
