Fried egg made in an iron wok
Spicy, soft fried egg!!
Steps
- 1
Heat a small iron wok, add the oil. When hot, break the egg and place the red chilli over the egg. Cover with a lid immediately and place on medium flame.
- 2
Turn the egg and keep for another minute or so until egg is done. Egg comes out soft and fluffy! Sprinkle little salt and spicy chilli powder and serve.
- 3
For the spicy chilli powder: Pound garlic pods coarsely and mix with chilli powder and pinch of salt. Let dry in a plate. After a day or two, dry grind and store in a jar. You can make a quantity of this chilli powder and keep handy. Can be used over eggs, sauteed corn and assorted dishes...
