  1. 3 lbred potatoes; quartered
  2. 3/4 cupsalsa verde
  3. 1 tbsproasted & ground cumin
  4. 1 tbsppaprika
  5. 1 tbsponion powder
  6. 1 tbspgarlic powder
  7. 2 tspcumin seed
  8. 2 tspMexican oregano; dried
  9. 2 tspancho chile powder
  10. 1 tspcayenne pepper
  11. 1salt and pepper
  12. 1vegetable oil; as needed

  1. 1

    Marinate potatoes in salsa for 4-48 hours.

  2. 2

    Drain. Pat dry. Toss with enough oil to cover. Season.

  3. 3

    Roast at 375° for approximately 40-45 minutes or until potatoes are caramelized and fork tender.

  4. 4

    Shake pan a few times while cooking to toss around potatoes for even cooking and caramelization.

  5. 5

    Variations; Smoked paprika, chipotle, cinnamon, chile powder, applewood seasoning, parsley, mustard, cilantro, onion, shallot, sweet potato, squash, jalapeno, adobo, tequila, poblano, crema, chives, scallions, butter, bacon, corn, beans, bell peppers, tomatillos, tomatoes, carrot, celery seed or root, tamarind, horseradish, mustard seed, other salsas, thyme, rosemary
