Kale & Butternut Squash

November and December are months were you really need to come up with amazing side dishes
to compliment that turkey or ham or whatever meat you are cooking for the big feast. This is a vitamin-packed dish that includes some amazing superfoods. Kale is a family favourite, D eats loads of it at her childcare and she loves it, so its great to make it at home too :). I made this for a week night meal a few weeks ago, and thought I should share this, especially if you are in need of some inspiration for a side dish idea. I highly recommend this - it tastes great and its just so good for you! haha

Heat the oil in a pan, and add the onion and garlic and saute for a few mins

Next add the squash and cook on medium low heat until the squash is lightly browned

And almost tender. This took me around 7-10mins

Add the chopped kale, lemon zest and juice. Season with salt and pepper and continue to

Cook till the squash has cooked through and the kale has wilted

Once done, transfer to a serving bowl and add the cranberries and nuts and toss to combine

Sprinkle with the crumbled feta... SERVE!
