The recipe you are about to read is easy to make, has a lot of flavour, and goes great with some meat on the side! I love how simple this dish is, my husband was starving so it was quick to whip this up for lunch not so long ago. It took me about 15mins
Orzo is a form of pasta shaped like a grain of rice. You can use it as part of a salad, or use in a casserole dish, or in my case I am using it as a side to go with some chicken that I made for lunch not so long ago! :)

Ingredients

  • 2 cupsOrzo :
  • 6Spring Onion : chopped , separate the white and green bits
  • 2 cupsStock : (chicken or beef or veggie, your choice!)
  • handfulParsley parsley of : a freshly chopped
  • handfulDill Dill of : a freshly chopped
  • Salt Pepper and
  • 1/4 cupParmesan :

Steps

  1. 1

    Boil the orzo until al dente in some salted boiling water

  2. 2

    Chop and prep the herbs while this happens

  3. 3

    8mins later drain the orzo

  4. 4

    Cook the white bits of the spring onion in the olive oil until tender

  5. 5

    Add the orzo, two cups of broth, the green bits of the spring onion, parsley, dill and season with salt and pepper

  6. 6

    Let it simmer and thicken

  7. 7

    Finally add the grated parmesan and give it a quick stir

  8. 8

    Your dish is now ready to serve

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US.
