Aloo Baingan Theeka Masala

Slice the baingan into halves and potatoes into chunks and boil the potato. Shallow fry the eggplants and potatoes seperately.

In a kadai,saute the garlic,ajwain and onions with little salt. When translucent,add the masalas,except garam and tikka masala. Mix well and let it cook for 2 mins.

Add the chopped tomatoes ad stock. Put the fried vegetables that is potatoes and baingan. Stir well.

Cover and cook for 5-10 mins. Open.add the kasurikasuri,tikka masala,ketchup and garam masala. Season with necessary salt.

Garnish with the fresh coriander leaves.

Serve hot with nair oil chapati!
