Ingredients

  1. 6 - 7 numbersbaingan egg plant / small small
  2. 2 numberspotatoes
  3. 2 numbersred onions
  4. 8 - 10 clovesgarlic chopped
  5. 2 numberstomatoes
  6. 3 tablespoonsolive oil
  7. 1 tablespoonbutter
  8. 1/2 teaspoonturmeric powder
  9. 1 teaspoonchilli powdered
  10. 2 teaspoonscorianderpowder
  11. 1 teaspoonajwain
  12. 1 teaspoongarlic powder
  13. 1 teaspoonchaat masala
  14. 1/2 cupvegetable broth chicken stock /
  15. 1/2 teaspoonkasuri methi powdered
  16. 1/4 cupcoriander leaves chopped
  17. to tastesalt
  18. 1 tablespoongaram masala
  19. 1 - 2 tablespoonstomato ketchup
  20. 2 tablespoonsmasala/tikka masala punjabi
  21. 4 - 5 tablespoonsoil to shallow fry

Steps

  1. 1

    Slice the baingan into halves and potatoes into chunks and boil the potato. Shallow fry the eggplants and potatoes seperately.

  2. 2

    In a  kadai,saute the garlic,ajwain and onions with little salt. When translucent,add the masalas,except garam and tikka masala. Mix well and let it cook for 2 mins.

  3. 3

    Add the chopped tomatoes ad stock. Put the fried vegetables that is potatoes and baingan. Stir well.

  4. 4

    Cover and cook for 5-10 mins. Open.add the kasurikasuri,tikka masala,ketchup and garam masala. Season with necessary salt.

    Garnish with the fresh coriander leaves.

  6. 6

    Serve hot with nair oil chapati!
