I love experimenting with stuffed parathas because my big man (read husband) isn't too fond of vegetables as is. This is something I tried when I had extra carrots at home and now I'm going to make sure I stock up on excess carrots :)

I love experimenting with stuffed parathas because my big man (read husband) isn't too fond of vegetables as is. This is something I tried when I had extra carrots at home and now I'm going to make sure I stock up on excess carrots :)

Grate carrots and finely chop onions, chillies, coriander leaves. Mix together and add to a bowl.

Add some salt, red chilli powder, haldi and garam masala to the veggies. Mix well.

Add four fistfuls of flour to this mixture. Add water and a little oil to make a soft dough.

Roll out into slightly thickish parathas. Cook on a tava adding generous oil on both sides to cook the paratha through and through.

Serve hot with butter and raita! (It's quite tasty as is so you don't really need a pickle or veggies to go with this.)
