This is Hiroshima-style okonomiyaki that's easy to make at home, the way my family likes it.

Adjust the amount of liquid in the batter depending on how stiff it is.
By lining the pan with the yakisoba noodles first, the noodles hold the batter together and the pancake is easy to flip over.

Ingredients

2 servings
  1. Additions to the batter:
  2. 50 gramsThinly sliced pork belly
  3. 1packet Yakisoba noodles
  4. 1/4Cabbage
  5. 1 stalkJapanese leek (or green onion)
  6. 2Eggs
  7. For the batter:
  8. 5 cmlong piece ☆ Nagaimo
  9. 1☆ Egg
  10. 100 grams☆ Plain white flour
  11. 150 grams☆ Water
  12. 1 tsp☆ Dashi stock (bonito based)
  13. 1Sesame seed oil
  14. Sauces, toppings, etc.:
  15. 1Okonomiyaki sauce
  16. 1Bonito flakes
  17. 1Red pickled ginger
  18. 1Mayonnaise

Steps

  1. 1

    Chop up the cabbage and green onion or leek. Cut the pork belly slices in half.

  2. 2

    Great the nagaimo, and mix together with the chopped vegetables from Step 1 and the ☆ ingredients.

    Heat sesame oil in a frying pan and spread out the pork belly slices and yakisoba noodles (1/2 pack worth).

    Pour in half of the batter. Break an egg into the middle, put on a lid and steam cook.

    When the batter has started to firm up, turn it over to cook the other side (make another pancake in the same way).

    Transfer to serving plates and enjoy with okonomiyaki sauce bonito flakes and other garnishes.
