combine 1 and half cup flour and salt

make well in the center and add the eggs and yolk into well. beat and mix slowly gradually adding more flour.

mix with your hands til a nice smooth dough.

knead the dough on a lightly floured surface til smooth and velvety.

cover with plastic and allow to rest for 15-20mins.

knead the dough one last time. split into sections and roll the dough out into thin sheets. roll from the center outwards.

cut into small circles or squares. add a teaspoon of your filling to each one. cover with another small circle or square and with your fingertips seal the parcel well.

bring water to boil in a deep pot. put the ravioli in and allow to boil for 10-15mins til you feel they are done.

take a small amount of oil and fry them lightly for 3-5mins.

plate up, add ur sauce or extras and enjoy!
