The dish might sound intimidating. But it's not. It's very light and looks elegant on a summer eve party table with some Chardonnay :)

Cook pasta in salted water. I add some olive oil too.

Sauté bacon bits in olive oil and add cooked pasta to it.

Once mixed thoroughly, if it looks totally dried out, pour a ladle of pasta water.

Dressing - combine mint leaves, lime juice, salt and pepper with little olive oil in a small container and shake well.

Switch the flame off and drizzle the dressing and mix well. Add chopped cheddar bits and keep covered for few minutes and then serve warm.
