Chorley Cake - Lancashire Cake to Use Up Spare Pastry - So Nearly FREE :P Enjoy :P

Ok I grew up poor. But we was never hungry and everyone in the family knows how to make everything taste amazing and nothing goes to waste. Chorley Cakes are simple example. You can make a batch of these from scretch and they are amazing but I have just made a Quiche and have a little pasty left. Over to Mum and Grandma. Make an amazing little cake or 2 and keep for later. Truely Amazing - Thanks guys.

Bring the pastry together into a ball and roll out to about 1.5mm thickness.

Put currants in the center and then sprinkle the sugar on top. Wash the edges with the milk and bring into the center so they just overlap. Slightly press down to seal. Turn over seal side down ontop a greased baking sheet.

Heat oven to 180c (mine of course is cooked same time as Quiche (dont want waste more power :P). Wash the pastry with more milk and then sprinkle a little more sugar ontop. Use a small knife to cut a few slits in the top to let out any steam. And bake for 20 minutes or until Golden BRown. Allow to cool !!!! THESE ARE HOT.

Of course I am from Lancashire so we slightly warm and then spread with butter and eat - truly amazing and we nearly FREEEEEEEEE - enjoy :P
