Amaranth Puri

The Hindu vrat or fasting season in India is not just about observing fasts to cleanse the body, mind and soul but is also about mindful eating and consumption of some really nutritious and wholesome produce. One such plant is amaranth or rajgira, the seeds and flour of which, is very popular during religious fasting. Rajgira ki Puri is one of those many dishes that can be made with rajgira atta (amaranth flour). This happens to a be a non-cereal product, thus, is naturally gluten-free. This recipe also uses all plant-based ingredients and is therefore, vegan too.

Steps

Grind the ginger, chillies and cumin seeds coarsely.

Take the amaranth flour, green chillies, cumin seeds, ginger paste and rock salt and mix everything together.

Smash / grate the potatoes and add the same to the flour. Bind all the ingredients together with the water that is released from the potatoes. If necessary, sprinkle water as required and bind together to form a hard dough.

On a plastic sheet, take a lemon sized ball and flatten it using water or amaranth flour as preferred.

Heat ghee in a kadhai. Fry the puris immediately as rolled because keeping the rolled puris over a period of time, will tend to splutter the dough and the puris will break.

Serve hot with "Vrat Wale Aloo Ki Sabzi" or "farali chutney"
