Mint potato cutlet

I love mint leaves for the freshness and aroma they bring into my kitchen. Usually I end up making a chutney or a thogaiyal. In rare occasions, I make mint rice for lunch/dinner. I was having a craving for cutlets this afternoon and the bunch of fresh mint leaves that I bought this morning was inviting. So here you go - mint leaves in cutlets, shallow fried :-)

Dry grind the roasted gram dal into a fine powder. Keep it aside.

Toast the bread slices and powder them in a mixer. Keep it aside.

Heat a wide bottomed pan. Add 1 tbsp oil. Add jeera and fry for a minute

Add onions and saute them till it turns light brown. Add ginger garlic paste and mix well

Add grated carrots and fry for a couple of minutes. Add chopped mint leaves and mix well.

Keep in low flame and add the dry masala powders and the required salt.

Add the mashed potatoes and mix well till everything comes together and looks dry

Take it out in a bowl and let it cool

Add the roasted gram dal powder to the potato mixture and mix well

In a wide bowl, mix the all purpose flour with water till it forms a thin batter.

Heat a tawa, add 2 tsp of oil. Keep in medium flame.

Make small balls out of the potato mixture and gently flatten it on your palms.

Dip these flattened balls in maida batter. Coat them completely

Then dip them in bread crumbs powder and coat nicely

Place them on the tawa. Add few more drops of oil and cook on both sides till it turns brown.

Serve them hot with ketchup or green chutney
