Cucumber Parsley salad

Parsley has been growing well in my balcony. I pluck a couple of sprigs whenever I make pasta. This salad has a nice strong flavor of parsley and crunch from apples and corn. I don't like to have salad as a meal by itself for either lunch or dinner. So I usually make a bowl of fresh salad for my evening snack.

Ingredients

  • 1Cucumber -
  • 2 tbspsSweet corn (steamed) -
  • half of a small oneApple -
  • 1/2 cupBell peppers (yellow and red variety) - chopped
  • 4 - 5 sprigsParsley -
  • 1 tbspFlaxseeds -
  • 2 tspsExtra virgin olive oil -
  • 1 tspVinegar -
  • - 3 clovesGarlic
  • pepper Freshly ground - as needed
  • Rock salt - as needed

    Chop cucumber and apple into cubes

  2. 2

    Finely chop parsley leaves

  3. 3

    Toast flaxseeds in a pan (without any oil) for 2-3 minutes and keep it aside.

  4. 4

    In a small bowl, mix together olive oil, vinegar, garlic, salt and pepper. Keep this dressing aside. Whisk nicely until the oil and vinegar mixes well.

  5. 5

    In a wide bowl, place cucumber, bell peppers, sweet corn, apples and parsley. Mix together using 2 forks.

  6. 6

    Add the dressing around the veggies and toss them gently.

  7. 7

    Serve with toasted flaxseeds on top.
