Ingredients

50 mins
14-piece
  • 3/4 cupAll purpose flour
  • 2 numbersEgg
  • 2/3 cupSugar Granulated
  • 1/2 cupVegetable Oil
  • 3/4 cupDry fruits (chopped)
  • 1/4 cupWater
  • 2 tablespoonsCranberry sauce (optional)
  • 2 tablespoonsVanilla essence
  • 1 teaspoonBaking powder
  • 2.5 tablespoonsflour All pupose (for dusting fruits)

Steps

  1. 1

    Add the water, 1/3 cup sugar, Vanilla essence, cranberry sauce and fruits in a sauce pan and bring to a boil

  2. 2

    Once boiled, turn off the heat and let it cool

  3. 3

    Prepare the cake tin by brushing with oil and dusting with the flour, or use a non stick cooking spray

  4. 4

    Mix all the remaining ingredients together thoroughly (except the flour for the fruits)

  5. 5

    Preheat your oven at 200 degree Fahrenheit for 10 minutes

  6. 6

    Strain the fruits from the liquid and toss in flour so that all the pieces are coated with a thin layer of flour

  7. 7

    Add the strained liquid to  the batter and mix well

  8. 8

    Now slowly fold in the fruits into the batter

  9. 9

    Pour into the cake tin evenly

  10. 10

    Place in the oven

  11. 11

    Bake at 360 degree Fahrenheit for 50 minutes

  12. 12

    Test by inserting a skewer or a spaghetti stick, if it comes out clean your cake is done

  13. 13

    Remove from oven and let it cool down completely

  14. 14

    Serve with a fruity wine.. Merry Christmas!

Food is my solace anytime. And cakes and desserts are the best for that. For my first 3 years of baking I had to get innovative since I didn't have an oven. And so all my cakes or anything I baked were in pressure cookers!!The food I make is simple and easy, no fancy stuff here :) ( Am still a rookie when it comes to cooking )I love Japanese, Malay and American cuisines. And as much as adore appams and stews and Rice and fish curry. You get the idea!!Enjoy life, Enjoy food and the happy lil' sweet things!!
