Saffron Rice Pilaf

Earlier this week I was thinking of alllllllll the many recipes that I still haven't blogged about due to my very crazy schedule and I remembered this dish that I was waiting to blog about when I was making it never made it on the blog!!!! This recipe totally jazzes up a cup or two of plain white rice, so this is the perfect rice 'side' dish, or it can be paired with any curry of your choice! I love how pretty it looked when I dished it up. Also the nuts and the dried fruits totally make this rice dish even yummier. And oh! the saffron milk adds the yummiest flavor
Did I give you enough reasons to give this a shot? :) haha  Go on make this, I promise, you will LOVE it!

Ingredients

  1. 2 cupsrice of
  2. 4 cupswater of
  3. 1 tbspgarlic paste
  4. 1 tbspginger paste
  5. 1/4 cupghee of
  6. 1/4 tspsaffron
  7. 1 tbspmilk
  8. 1 inchcinnamon stick
  9. 7 podscardamom
  10. 1/4 cupcashews
  11. 1/4 cuppistachios
  12. 1/4 cupcranberries raisins and
  13. to tasteSalt
  14. 4 cupsrice water Wash the and then soak it in of

Steps

  1. 1

    Over low heat, toast the saffron threads. About 15-20 seconds later, the saffron will darken to a maroon shade. I then put it in a pestle and mortar and crushed it to a coarse powder. Add the tbsp of milk and set aside

  2. 2

    In a nice big pan, add the ginger & garlic pastes, cinnamon stick, cardamom to some ghee. After a couple of minutes add the nuts and finally the cranberries and raisins

  3. 3

    Giving it another couple more minutes, add the rice along with the water. Season with salt and stir well to combine

  4. 4

    Reduce the heat to low, cover and let it cook for about 15mins. Uncover and pour the saffron milk over the top of the rice. Put the lid back on and let it cook for another 5mins

  5. 5

    Serve along with your favorite curry
