Zesty Fish Curry

A new week begins ... instead of being at work, I have been at home as the 2yr old hasn't been in 100% health! We have been indoors the whole day, she either wanting to play, cuddle or listen to the colour song, I had my laptop on the kitchen counter trying to get some work done. From the time we woke up at 6:30am, its been raining ... constant heavy rain ... Perfect day to eat something like this fish curry. Again this is one of the recipes that has been sitting in the drafts for weeks! LOL ... I made this from fresh cod that I bought from the supermarket - I remember them having a nice deal on it, so I thought I would bake it or something, but then ended up making a curry
I like the spicy and zesty kick this curry has! This curry was made for two people, so you will need to eyeball the ingredients and plus or minus the quantity depending on how many you are making for. I have also included two of my older fish curry recipes at the bottom of this post

First bring the water and the dried chillies to a boil. Remove it from the heat

While the chillies was boiling away, I dry roasted the coriander and cumin seeds and ground it a fine powder

Back to the dried chillies, transfer it to a food processor and add the garlic cloves and grind it to a fine paste. To this add the ground powder, and the lemon juice. Once well mixed, set it aside

Take a large deep pot and add some oil. Once the oil heats up, add the thinely sliced onions and saute until its translucent

Next add the spice paste and cook for 10minutes. Then add in the coconut milk and the 1/2 cup of water, the chile powder and give it a quick stir

As it starts to boil, add the cut pieces of cod fillet, season with salt, reduce the heat to low, cover the pot with a lid and let it cook

Remove from the heat and slowly transfer the fish curry to a serving dish, make sure the fillets don't fall apart! Garnish with freshly chopped coriander leaves

Serve hot with some freshly steamed white rice
