Springtime and Brunches!!

Vegan* French Toast filled with Chocolate!!!!
Every dark cloud is followed by the sun, every ash in the fire place leaves behind some warmth, every night brings with it a beautiful serene morning and of course every winter season is stalked by the spring....
Change is fiery - more often unwelcomed. It causes ambiguity, discomfort, instability, fear of the unknown and above all it changes you somewhere subconsciously especially when you do not want to be changed! However this change makes you more acceptable, more forgiving of yourself and others, more practical and maybe even a wee bit creative in holding onto things you just cannot have changed in your life!
But there is one change that a lot of people love to look forward to- its Welcoming the SPRING! It brings colors, smells, warmer, longer days and a sense of goodness. What says spring better than the flowers... the chirping birds... the warm sun with the cool breeze on the porch....and yes brunches! :)
In honor of the moving seasons..here is the brunch I can put a crackwhip on, for all that its worth ;)

Mix well the first four ingredients well and let sit for 5 minutes.

Take the slices of bread and thin them out in the middle only creating a small cavity or dip in the bread (do not create a hole in the bread).

Dip the slices of the bread in the above batter.

Take one dipped slice of the bread and lay the dark chocolate thin slices in the small cavity in the bread. Take another dipped slice of the bread and lay it over the bread with the thin chocolate slices on it(almost like creating a sandwich)

Pan fry them on medium-low, in 1-2 teaspoons canola oil till its the golden brown that you like on each side.

Decor the French Toast with Strawberry slices, agave syrup, and a dallop of vegan whipped cream if you'd like.
