Ingredients

2 servings
  1. 1 lbchorizo or meat of your choice
  2. 2 cupsrefried beans
  3. 2 cupsMexican shredded cheese
  4. 1 cupenchilada sauce
  5. guacamole
  6. sour cream

Steps

30 mins
  1. 1

    Remove chorizo from casings & chop & cook in cast iron skillet or pan of your choice

  2. 2

    Remove cooked sausage from pan with slotted spoon & discard oil & wipe dry pan

  3. 3

    Add cooked sausage back to pan & add layers of refied beans, cheese & bake in 450° preheated oven.

    Remove when cheese starts to bubble & add enchilada sauce, sour cream & guacamole & serve with thick restaurant quality nacho chips.
