100% local - Roast Corn and Sweet Potato Pie

For our 100% local dinner today, my kids learnt how to shock corn.
They were quite amazed but are not familiar with roast corn and Shriya who is 3 kept asking, "daddy are you sure it's not burnt?" That was hilarious, guess it will be boiled corn next time.
I also made an impeccable sweet potato pie with sautéed zucchini, cauliflower and sweet peppers and used whipped fresh cream instead of cream cheese and topped it with homemade ricotta cheese. The kids enjoyed it all the same and could not tell the difference...hooray.
For a salad, I tossed bean sprouts, tomatoes and lettuce together in a homemade ranch sauce.
A very satisfying meal and quickly put together too.

Ingredients

  • 4sweet potatoes medium
  • 1zucchini
  • 1cauliflower small
  • 1pepper sweet
  • 1 cupfresh cream milk separated from fresh cow's
  • 1/3 cupricotta cheese homemade
  • Salt to season

Steps

  1. 1

    Peel and cut sweet potatoes into small pieces. Steam until very soft.

  2. 2

    Chop zucchini, cauliflower and sweet pepper into small pieces. Salt and saute until cooked.

  3. 3

    Mash sweet potatoes, add sauteed vegetables and fresh cream and combine well.

  4. 4

    Put into dish and dot with ricotta cheese.

  5. 5

    Bake for 30 minutes.
