A little fuel for biking

In case you didn't already know, I love to bike. I got into biking due to a running injury. After my residency, I kinda went overboard on running. I was doing about 9 miles a day... everyday. My hip started hurting while on vacation in Hilton Head with my family and I tried to ignore it but, by the end of the trip I could barely walk. Went and got an MRI and it turns out, I had a stress fracture in my femur. What the hell?!
So needless to say I was grounded from running for a while. I was allowed to do the stationary bike and swim though! I really missed being outside especially after 2 months on crutches. Even when I was done with the crutches I was told I really should not be running quite yet. I had mad cabin fever so I thought, how else I could get my exercise outside? Road biking!
Most good weathered weekends I love to get on the bike and ride around Brookhaven and up into Chamblee Georgia. I was lucky enough to feed Michael breakfast this morning before he rounded at work and I went out for a ride. So, I was inspired to make something different.
These spinach and goat cheese baked eggs are perfect on top of toast and also very healthy when you want a hot breakfast. Throw the bread in the oven when the eggs are almost done for toast :)

Preheat oven to 350 degrees Fahrenheit

Microwave the spinach for 3 minutes until wilted

Oil the bottom of a baking dish. Scatter the spinach in the dish. Sprinkle with lemon pepper seasoning.

Crack the eggs on top of the spinach leaving room between each egg.

Break the goat cheese over the spinach and eggs.

Bake for about 15 mins until egg whites are set. In the final 5 minutes of baking place the bread on the oven rack so it comes out toasty and warm.
