Kharwas/Colostrum-milk pudding

Cow's colostrum (cheek in Marathi) is the thick, yellow, nutrient- and antibody-rich first milk produced during the days immediately following the birth of a calf. A mother cow produces more colostrum than her new baby can consume, so it is traditional practice among some families and dairy farmers to gather the surplus colostrum for human use. Having a dairy outlet close to my house,I could manage to get it and make the Indian delicacy called Kharwas/ Posu/Junnu. I made tricolor kharwas on the eve of Indian Independence Day.
Colostrum milk is thick and needs to be diluted with equal quantity of cow's milk. We need to add sugar as per taste and cardamom powder/saffron for flavor.
Mix them together till the sugar dissolves and pour the mixture into a steel container. I put some mixture into a muffin mould and added colors to match the Indian tricolor.
Put these in a pressure cooker/steamer and cook for 20 minutes. If u r using pressure cooker,then remove the whistle. Switch off the flame after 20 minutes and let it cool down.
Once it is cooled,cut into desired shapes and serve chilled.

Boil and cool cow milk. Do not boil colostrum milk,just strain it and keep it aside.

Mix the milks together,add sugar and stir till it dissolves.

Pour the mix into a steel container.

Add cardamom powder and saffron strands.

Steam for 20 minutes in a pressure cooker/steamer. If you are using a pressure cooker,remove the whistle.
