Sundried Tomato, Spinach, & Goat Cheese Stuffed Chicken

Preheat oven to 350 degrees Fahrenheit. Also heat cast iron grill pan to medium high heat with a little olive oil.

Beat the chicken breasts fairly flat (about 1/2 inch thickness)

Sear the chicken on both sides for a few minutes. Set aside and let cool for a few minutes.

Lay the goat cheese, sundried tomatoes, spinach and basil on one side of each breast. Then fold the breast in half and secure closed with toothpicks.

Place in the oven for about 15-20 mins until goat cheese is melted.

Remove from oven and take out the toothpicks
