Ingredients

6 servings
  1. 2 poundsground meat, I used ground sirloin
  2. 4 cupsdiced pineapple I used fresh that i grew but canned/tinned is fine
  3. 1medium onion diced
  4. 1 teaspoonminced garlic
  5. 29 ouncestomato sauce
  6. 1 teaspoonsalt
  7. 3 teaspoonground cumin
  8. 1/4 cuptomato paste
  9. 2-1/2 cupsextra sharp cheddar cheese
  10. 2 tablespoonbalsamic vinegar
  11. 2 tablespoondark brown sugar
  12. 1 tablespoonyellow prepared mustard

Cooking Instructions

  1. 1

    Cut the pineapple up. In a wok/frying pan keep it dry and add the pineapple. Don't add oil. stirring often. cook till caramelized. Set aside.

    Chop the onion, brown the meat add onions, garlic, salt, cumin, vinegar, sugar, mustard, and tomato sauce. Simmer 15 minutes stirring occasionally. add pineapple and tomato paste.

    Simmer 20 minutes serve with cheese on top or mix in the chili i mixed mine.
