Quick Cauliflower Fry

I don’t remember the last time I went for shopping with a friend, I miss doing all those girly things…window shopping, buying junk jewellery (I am a big fan), chatting over hot sips of coffee.
Whenever I would go to Pune, I would rant about this big loss to my friends who listened patiently. Then one of my dear friends Shalaka told me that her sister Asmita was in Bangalore and stayed very close to my place. She asked me to drop by at her place and introduce myself. Somehow that never happened over a year, finally when Shalaka came to Bangalore 4 – 5 months ago, she introduced us and we hit off. I was so thrilled to have another friend at walking distance from my house that I often ended up going to her house for coffee J.
Last Monday Asmita and I planned to go shopping, the plan was that she shops and I tag along with her, check out all those by lanes of Commercial Street from where she picks up her stock for sewing.. Oh yes! She stitches adorable clothes and even blogs about it here – elephantinthestudy.wordpress.com. Her precious little daughter models for mommy, other than clothes Asmita has made oven mitts, quilts and there is a lot more to come in the future. How do I know that?? So, since I had an exciting day forward I wanted to make something quick n tasty cause without a full stomach I just would not be able to shop! Am serious!

Wash the cauliflower, cut into florets; soak the florets in turmeric and salt water for 15 minutes to remove the dirt.

After fifteen minutes, wash thoroughly under running water and set aside to drain the excess water in a colander.

Take a heavy bottom or a non stick pan; I used my iron kadhai for this (I try and use it as often as possible) add the oil.

Once the oil is hot, add asafoetida (hing), then the minced garlic, cumin, mustard and sauté for 10 seconds, and then add the chopped onions.

Sauté the onions till golden brown, and then add the turmeric powder and red chili powder.

Add the cauliflower florets along with ¼ th cup of water to the pan. Cover and cook for 7 – 10 minutes till the florets become tender.

After 10 minutes, add the garam masala and salt, adjust the seasoning as per taste.

Once the cauliflower florets are cooked remove them from heat.

Serve hot with phulkas or chapattis.
