Long Purple coloured Eggplants and Fritters make for a healthy snacking idea. These crisp and flavourful Fritters or Pakoras made with Eggplants, Onion and Gram flour or Besan are a great treat at Tea-time. Green coloured one's are also a lovely option for anytime munchie in the form of Pakoras or Fritters or Bhajiye but unfortunately I couldn't lay my hands on them here at my place of stay.
These freshly available Veggie in the markets is put to use by me in these beautiful looking Fritters. Not only are these done quickly without much hassle, these are absolutely refreshing with a dainty aroma of subtle flavours of fresh Vegetables. These taste so delicious with any homemade simple Dip or Chutney. It was a yummy variation for a snack for the whole family. Kids and the adults would enjoy these alike.
The spices can be adjusted accordingly. Use of little Rice flour or Cornflour also adds to crisper Fritters. I chose rice flour or Chawal ka aata for these lip-smacking homemade Pakoras. Any other Vegetable like thinly sliced Onions also could be used just as I did. The variations could be any and many according to your choice. Let's get going.

Steps

Wash and pat dry the eggplants at first. Trim both edges and cut them into medium strips lengthwise. Also thinly slice onions as well.

In a bowl combine the eggplant strips and onion with finely chopped green chillies, coriander leaves, chaat masala, gram and cornflours, turmeric, red chilli powder, baking soda, hot oil and salt to taste. Mix well.

Add some water to combine everything together. Set aside for about 15 minutes. Meanwhile heat oil for frying. Do not heat it on a high. Do it on a medium high so that the fritters don't get burnt in very hot oil.

Fry in batches of two or more as required. Drop small portions of the mix and fry until golden brown on both the sides. Drain on an absorbent paper or a kitchen towel.

Serve hot at tea-time or shaam ki chai when it's pouring outside. It's absolutely a bliss. Any dip or chutney would definitely make it more delightful and desirable. Enjoy!
