Sauté the onion in oil until translucent. Add the diced tomatoes and the chicken bouillon cube.

Once the mixture is sautéed, add the mushrooms and make sure they don't burn.

Cut the ham into small cubes and add it to the sautéed mixture.

Let the liquid released by the tomatoes and mushrooms cook off, then set aside.

Shred the Oaxaca cheese to prepare for assembling the quesadillas.

Take a tortilla, add Oaxaca cheese to taste, and place it on a preheated griddle or skillet. Once the cheese is melted, add the mushroom and ham mixture, fold, and serve.
