Peel the potatoes and slice them into rounds about 5–6 mm (¼ inch) thick.

Add enough oil to generously cover the bottom of the pot (about 1–2 mm deep).

Arrange the potato slices in a single layer on the bottom of the pot.

For a sesame potato tahdig, sprinkle some hulled sesame seeds over the bottom of the pot before arranging the potatoes.

Add the rice over the potatoes, then cook as usual.

If you are not using a non-stick pot (such as Teflon) but instead are using stainless steel, Pyrex, or similar cookware, keep the oil closer to 2 mm deep.

Using too little oil in these pots can cause the tahdig to stick to the bottom.

Make sure the oil is hot before arranging the potatoes. If the oil is not hot enough, the tahdig is more likely to stick to the pot.

Note
Try to keep the potato slices about 5–6 mm thick. Thinner slices may burn or stick easily, while thicker slices may not cook through completely.
