  • 150 gonion, peeled
  • 250 gsausage
  • 40 gneutral cooking oil
  • 1 tbsptomato paste
  • 1/4 tspblack pepper
  • 1/4 tsppaprika
  • 1/8 tspgarlic powder
  • 2sandwich rolls
  • as neededWater
  • Salt, to taste
  • Pickles, for serving
  • Tomato, for serving

    Slice the sausage into rounds.

    Cut the onion into thin slices, as shown in the photo.

    Heat the oil over medium-high heat and fry the onion until lightly golden. Do not let it brown too much, as it may burn during the next steps. The color shown in the photo is just right.

    Stir the onion frequently while frying. Since we want it lightly golden, it can burn easily. Use medium-high heat, as cooking over low heat for too long will make the onion sweeter.

    Mix the tomato paste with a little water until smooth. The consistency should match the video.

    Add the salt and spices to the diluted tomato paste and stir until well combined.

    Browning the sausage is optional. If you choose to brown it, cook it over high heat for a very short time. Cooking it over low heat for too long will cause the sausage slices to puff up and become rubbery.

    Add the sausage to the onions.

    Pour in the tomato paste mixture and gently stir just until everything is coated. Avoid over-stirring, as the sausage slices may break apart.

    Add the tomato paste to the fried onions and sauté for 1–2 minutes until it becomes glossy and the raw flavor cooks off.

    Add the salt and spices, then cook briefly until fragrant.

    If needed, add a little water until the sauce is smooth. If it is already smooth, there is no need to add water.

    Browning the sausage is optional. If you choose to brown it, cook it over high heat for a very short time. Cooking it over low heat for too long will cause the sausage slices to puff up and become rubbery.

    Add the sausage and gently mix. Let the sauce simmer over low heat until it thickens. Avoid stirring too much, as the sausage slices may break apart.

    Once the sauce has thickened to the consistency shown in the final photo, remove from the heat. Serve in sandwich rolls with pickles and fresh tomatoes.

    Bandari Sausage Sandwich is traditionally served with pickles and fresh tomatoes.

    Adjust the seasonings to your taste.

    If you would like to prepare a spicier, southern-style version of this dish, you can use spices such as ginger, cloves, black cumin, nutmeg, black peppercorns, red chili pepper, paprika, and coriander seeds. These spices not only add bold flavor but also give Bandari Sausage Sandwich its distinctive aroma.

    You can omit the paprika and use ½ to 1 colored bell pepper (red, yellow, or orange) instead. Green bell pepper is not recommended.
