Cook the noodles according to the packet instructions, drain, and let them cool slightly.
Heat 1 tbsp oil in a pan. Sauté the onion until soft, then add the ginger-garlic paste, carrot, cabbage, and capsicum. Cook for 2–3 minutes.
Add the cooked noodles, noodle seasoning, black pepper, ketchup, and soy sauce (if using). Mix well, then stir in the coriander leaves. Let the filling cool completely. - 2
Trim the bread crusts if preferred. Dip each bread slice quickly in water and gently squeeze out the excess water.
Place a spoonful of noodle filling in the center of each bread slice and shape it into a ball, sealing the bread well.
Heat oil over medium heat and deep-fry the bread balls until golden brown and crispy on all sides.
Drain on paper towels and serve hot with tomato ketchup or green chutney.
Tips
Cool the noodle filling before stuffing to make shaping easier.
Don't soak the bread for too long—just a quick dip is enough.
